Spinach  Pasta with Roasted Vegetable Sauce 

Instant pasta and its green ! So much fun and really creative .

* 200g baby spinach

* 300g  plain flour , plus extra for dusting

* olive oil

* 4 cloves of garlic

* 200g courgettes, aubergine, peppers

* 320g ripe cherry tomatoes , on the vine

* 50g pine nuts


Great recipes to play with your child.  In a food processor, blitz the spinach and flour until a ball of dough forms. Touch the dough – it shouldn’t be sticky, you want a play dough consistency, so add a little more flour, if needed. Than make the pasta sausage tear off 2cm balls of dough and roll them out into long thin sausage shapes – or green beans.

Cook for about 5 min in salty water. 

All the rest vegetable roast with olive oil and garlic, then combine everything together.
