Savoury Pancake Recipe

With pancake day coming up here’s a recipe that we used at a past session at Organiclea for you to try at home. Pancakes don’t need to be sweet and this recipe can be adapted by added whatever vegetables and herbs that you like. The pancakes can be served as a snack or as a main meal with some added veggies or tomato sauce as a dip. They can even be frozen between sheets of parchment paper and warmed up.

Organiclea Savoury Pancakes
Ingredients :
2 cups chickpea flour
1 tsp spoon turmeric
1 tsp spoon baking powder
Small bunch of coriander
Small handful of spinach leaves chopped finely
1 carrot
1 sweet potato (cooked)
Water
Instructions :
Snip the coriander, grate the carrots, mash the potatoes and cut the spinach leaves.
Mix all the ingredients together, adding water gradually until it is smooth.
Put it in a pan with a little bit of oil, flip it over and it is done!
