Date and Cashew Truffels
 
Ingredients

200g cashew nuts

100g soft dates

1 handful of cranberries

2 teaspoons of peanut butter

1 tablespoon of cocoa powder

 

Method

1.Blitz up the dates, peanuts together in a blender

2.Once you have a crumb like consistency which will stick together when pressed add the cranberries and cocoa powder and blitz for a few seconds more.

3.Roll the mixture in your hands into little balls and roll in desiccated coconut, chopped nuts,cocoa powder .
