Need to make lunch for a toddler but you've got no bread in?
Never fear, We have the solution! Your little one can get stuck into making this pastry first and then you've got Pesto Swirls for lunch. One of our trainees Sarah first got us into this recipe, and Aneta loved it so much she included it in her sessions at St Hugh's. Pastry: Add 6tbsp oil to 200g flour. Gradually add water to make a doughy ball. Play with it!
Pesto: Blend together 3cups of spinach, 1cup of basil, handfull of ground almonds,2 cloves garlic, 2tbsp lemon juice, 6 tbsp extra virgin olive oil, sea salt.
Roll out pastry
Spread pesto, cut about 5cm stripes, and twist.
Bake in the oven - 180°c for about 10-15min.
