This is one of our favourite quotes. After so many weeks of lockdown we have all experienced cooking fatigue. You run out of ideas and energy to come up with a new dish. And that's where we come in! All our recipes are easy, healthy and delicious. And we are cooking together which is always more fun.
We'll shake up your lunch routine!
Next Tuesday - Carmen from our East London Hub and Aneta from South East London will make some colourful rainbow wraps. Another summer recipe that does not even require for you to be in the kitchen, you could set up in the garden if your internet connection allows... Food Processor (optional, don't worry if you don't have one, get a potato masher)
For the Slaw:
Any veg you can eat raw the more colourful the better (carrots, beetroot, peppers, red cabbage, tomatoes, etc.)
Fresh Herbs (parsley and coriander would work well)
For the Hummus:
Chickpeas (or other beans)
Tahini (also optional)
Tortilla Wraps to Serve (or pitta or regular bread, they could be rainbow sandwiches...)
A short note about ingredients: we try to use local and seasonal produce and tweak recipes accordingly. Tweaking is also necessary at the moment now that we can only leave home for essentials. For this reason we've given you loads of options, please don't be daunted by them! We will also help with substitutions on the day.
