COUSCOUS VOLCANOES



The kids will be...Chopping, Grating, Mixing, Shaking

This is one of our easiest recipes, with plenty of choice for what to chop, tear, cut and grate - and no cooking!

Recipe tip...

Kids love jobs they can do unaided, so cutting a vegetable into strips which they can then chop up into smaller chunks by themselves is a good way of achieving this!

Ingredients

For the couscous:

1 500g packet of plain couscous

A selection of raw vegetables of your choice:(carrots, courgettes, yellow/green/red peppers, green beans, pitted black olives, cucumber, tomatoes, spring onions and spinach all work well!)

A handful of fresh mint

For the dressing:


Tomato passata

Olive oil

Vinegar

Need:

Jar with lid for the dressing

Method

1. Make the couscous according to the packet instructions in a large bowl - usually add equal boiling water to the couscous you have, and leave covered for 10 minutes.

2. Prepare the vegetables:

Use a small knife and chop the peppers, cucumber, green beans, olives and tomatoes.

Use scissors to snip up the spring onions and spinach.

Use a grater to grate the carrots and courgette (careful of small knuckles!).

Use fingers to tear up the spinach and mint into teeny pieces!

3. Make the dressing/lava: put 2 tbsp of olive oil and 1 tbsp of vinegar into a jar along with a blob of passata.

4. Put the lid on (make sure it's on tight!) and shake well!

5. Pour all the prepared vegetables into the bowl with the couscous and mix it all together.

6. To make a volcano: use a small cup as a mould, and turn out into a bowl. Pour the ‘lava’ dressing on top. Voila!
