Lentil & Quinoa Burgers with Mango Salsa




  • 200g green lentils

  • 125g quinoa

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 1 carrot, grated

  • 2 tsp ground cumin

  • 40g breadcrumbs 

  • chopped fresh parsley

  • 3 tbsp tomato puree

  • 1 tbsp soya sauce

  • 1 tbsp nutritional yeast

  • 2 tbsp peanut butter

  • sea salt and black pepper

  • cornmeal or oats, for coating


Cook lentils and quinoa in a saucepan of boiling water approximately 20 min. Drain and cool and then use a potato masher 

chopped onion and grated carrot with olive oil and cumin fry in frying pan over a medium high heat for 5 -7 minuntil it is soft.

Combine the lentil-quinoa mix with the onion and carrots, stir in the breadcrumbs, parsley, tomato puree, soya sauce and peanut butter. Knead the mixture with hands until it sticks together. form the mixture into burgers.

Coat each burger in a little cornmeal or oats. 

bake in oven or use frying pan.


Serve with the mango salsa,



Mango Salsa:

1 mango, peeled and chopped

1 medium green pepper, chopped

1 small red onion, finely chopped

2 tbsp lime juice

1 tbsp orange juice

chopped fresh coriander.

Get the kids to chop everything as small as they can and combine with the juice and ripped up coriander.
