Thank you to everyone who joined us at No Child Left Behind’s Party in the Park last week. It was wonderful to welcome so many families to the Kids Kitchen stand to make some delicious Apple Energy Balls. The children and grown-ups got stuck in with plenty of chopping, snipping, mixing, squishing, shaping and rolling.
Here’s the recipe:
INGREDIENTS:
• ½ cup of dates
• ¼ cup of apple juice
• 1 cup of oats
• ¼ cup of sesame seeds
• Pinch of cinnamon
• Pinch of ginger
• ½ cup of desiccated coconut (optional)
METHOD:
- CHOP or SNIP dates (as small as you can)
- In a big bowl:
– DROP dates
– POUR apple juice
– SPRINKLE oats
– DRIZZLE sesame seeds
– PINCH cinnamon & ginger - MIX together with spoon
- SHAPE into around 5 balls using your hands
- ROLL in coconut & eat!
Feel free replace the sesame seeds with sunflower or hemp. Experiment with different juices to find your favourite flavour. Energy Balls will generally last for up to a week in the fridge in an air-tight container, or the freezer for 3-6 months.
We would like to extend a huge thank you to the No Child Left Behind team for welcoming us into the event, Bensons for the complimentary apple juice for our Energy Balls, Yeti Television, and our amazing volunteers for all of their support on the day.
